This summer I started an ice cream sandwich pop-up, in the form of a bicycle, by the name of The Cookie, in San Sebastián, Spain. (That's for newbies to the blog).
It turns out that it captured the interest and imagination of the locals. And with the quantities of sugar and butter that we went through this summer, how could it not?
